Snowy Soup
There's nothing better than a hot bowl of soup on a snowy Sunday afternoon!
Last Monday I decided it was time to re-commit to a healthy eating lifestyle. Enough was enough! It's been one full week now of healthy eating (minus a cheat day on Saturday!) and I feel amazing! I have so much more energy and I feel like I'm totally back on track.
The biggest key with being healthy is organization and planning in advance. Having soup on hand makes it easy to warm-up a quick lunch.
This weekend we were at the cottage and with all the fun cooking tools up there I just can't help myself from making lots of food!
Ingredients
3 Butternut squash
2 Large yellow onions
4 Macintosh apples
3 Tbsp olive oil
4 Cups of chicken stock
Salt and pepper to taste
Directions
Preheat oven to 375F.
Peel and cut butternut squash and onions into 2 inch cubes. Place on baking sheets with olive oil and mix together with hands. Bake for 35 – 45 minutes or until veggies are completely cooked through.
Using a vitamix, blender or food processor take half the veggies and 1-2 cups of chicken stock and mix together with 2 sliced apples. Then repeat with the other half.
Reheat when you're ready to eat in the microwave or on the stove!
